Starting Wednesday, I will be making dinner once a week at our house. N’s mom usually makes dinner, but I thought I would giver her a break from it once a week. This week I am making white chili. It is a chicken based chili. It is VERY GOOD. Here is the recipe:
4 chicken breasts
2 tablespoons olive oil
4 cloves garlic
1 onion chopped
2 cans green chiles (you can use one can if you don’t like spicy chili)
3 cans chicken broth
2 teaspoons cumin
2 teaspoons oregano
1 1/ 2 teaspoons cayenne pepper
5 cans great northern beans
1 cup shredded monterery jack cheese
cook chicken breasts and chop into bite size pieces.
chop onion garlic and chilies (if fresh)
Heat oil in a large pot over medium heat.
Satue’ onions and garlic until onions are tender.
add chicken, chicken broth, green chilies, cumin, oregano, and cayenne pepper.
Bring to a boil.
Reduce heat to low and add beans.
Simmer 20-30 minutes or until heated thoroughly.
Serve topped with cheese.
