I love baking just as much as I love scrapbooking. Not only am I going to have scrapbooking ideas and tips that Ihave learned, but I am also going to have baking recipes and a few cooking recipes. I am begining to want to cook more than I did before. Anyways, here is a recipe:
Peppermint Cookies
1 cup firmly packed light brown sugar
3/4 Crisco butter flavor stick or 3/4 cup crisco butter flavor shortening
2 tablespoons milk
1 tablespoon vanilla
1 egg
1 3/4 cups all purpose flour
1 teasppon salt
3/4 teasppon baking soda
2/3 cup crushed peppermint candy canes*
*to crush candy canes break ino small pieces. place in plastic food storage bag. secure top. using rolling pin break candy into small pieces.
1. heat oven to 375 degrees. Place sheets of foil on countertop for cooling cookies.
2. combine brown sugar, crisco shortening, milk and vanilla in large bowl. beat at medium speed with eletric mixer until well blended. beat in egg.
3. combine flour salt and baking soda. mix into ccreamed mixture at low speed just until blended. stir in crushed candy.
4. shape dough into 1 inch balls. place 2 inches apart on ungreased baking sheet.
5. bake 1 baking sheet at a time at 375 degrees for 8-10 minutes for chewy cookies or 11-13 minutes for crisp cookies. do not overbake. cool 2 minutes on baking sheet. remove cookies to foil to cool completely.
