Red Velvet Cake Balls

I made this for gifts for a few family members last year.  This recipe is from Bakerella.  She is awesome!

Red Velvet Cake Balls
1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (regular or white chocolate)
wax paper
1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)
4. Chill for several hours. (You can speed this up by putting in the freezer.)
5. Melt chocolate in microwave per directions on package.
6. Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.)

Oreo Balls

Oreo Balls
1 Package of Oreos
1 Large package cream cheese, softened
Almond bark in white or milk chocolate…or both!

Crush the Oreos. 
Add crushed Oreos to the cream cheese.
Mix.
Roll into small balls.
Referigerate until nice and firm.
Melt the chocolate per directions on package
Dip balls into chocolate
Place on waxed paper and refrigerate until they are really cold.

Snowball Cupcakes

Snowball Cupcakes
Ingredients:
1 package (8.25 ounces) chocolate cake mix
3 eggs
1/3 cup vegetable oil
1 1/4 cups water
2 cups whole milk
6 tablespoons flour
2 cups (4 sticks) butter, room temperature
2 cups sugar
1/2 teaspoon salt
2 large bags (14 ounces each) sweetened flaked coconut

Preparation:
Prepare cake batter using eggs, oil and water as called for on package.
Pour into standard-size muffin cups and bake according to package directions.

While cypcakes bake, make frosting: In a heavy, medium-sized saucepan combine
milk and flour and cook, over medium heat, until thick, about 6 minutes,
stirring occasionally.
In another bowl, cream together butter, sugar and salt.
When flour mixture has cooled, add to butter mixture and beat until fluffy using
a whisk attachment. This will take 6 to 8 minutes.
When cupcakes are done, cool completely, then frost all around.

To frost: Place a large portion of frosting in a wide shallow bowl. Press each
cupcake down firmly into the frosting to coat the bottom of the cupcake. Using
an offset spatula, apply frosting to the top and sides. Use spatula to lift
frosted cupcake onto bed of coconut. Pour coconut over cupcake and roll firmly
to coat completely. When cupcake is well coated, roll with hands to make a round
snowball shape. Store in an airtight container.

Peanut Butter Cups

This recipe is amazing.  It is easy enough for the kids to help and it tastes so good.  You would even know that it isn’t that name brand peanut butter cup.

Peanut Butter Cups
18 ounce jar of creamy peanut butter
2 3/4 cups sifted confectioners sugar
1/2 cup melted butter
melting chocolate-about 2 pounds

Mix all ingredients except chocolate together.
Take small pieces and roll into balls.
Place balls into small fluted candy cups.
Melt chocolate over hot water or in the microwave and cover peanut butter ball with chocolate.
Place into refrigerator until set.
**Note**
When I made this I put a little bit of chocolate in the bootom of the candy cup (mini cupcake liners) and then put them in the freezer to set up faster.  Then I added the peanut butter mixture and then  put more chocolate on top of that and put them back in the freezer.

Gingerbread men

I couldn’t have a holiday baking series without gingerbread men!  They are practically a staple of the holidays.  You can use the same recipe to make gingerbread houses as well. 

Ingredients

125 grams unsalted butter
1/3 cup soft brown sugar
1/4 cup golden syrup
1 egg, lightly beaten
2 cups plain flour
1 tablespoon ground ginger
1 teaspoon bicarbonate of soda
1 tablespoon of currants

Icing:
1/2 teaspoon lemon juice
1 1/4 cups icing sugar
assorted food coloring
1 egg white

Directions

  1. Preheat oven to moderate 180c degrees.
  2. Line 2 or 3 oven trays with baking paper.
  3. Using electric beaters, beat butter, sugar, and syrup in a small mixing bowl until light and creamy.
  4. Add egg gradually, beating thoroughly after each addition.
  5. Transfer mixture into large bowl, sift dry ingredients onto well floured surface and knead for 1-2 minutes or until smooth.
  6. Line a large chopping board with baking paper, roll out dough on board to 5mm thickness (flour rolling pin if necessary to prevent sticking), refrigerate on board for 15 minutes so dough is firm to cut.
  7. Cut dough into shapes with a 13cm gingerbread man cutter.
  8. Press remaining dough together and reroll. Cut out shapes. Place biscuits on prepared trays. Place currants as eyes and nose on men.
  9. Bake for 10 minutes or until lightly browned. Cool biscuits on trays.

Icing:

  1. Place egg whites in small dry mixing bowl, using electric beaters beat egg whites until foamy. Add lemon juice and icing sugar gradually. Beat until thick and creamy.
  2. Divide icing into several bowls. Tint mixtures with desired food colors.
  3. Spoon mixture into small paper icing bags. Seal open ends. Snip tips off piping bags.
  4. Pipe faces and clothing onto gingerbread men. When icing is completely dry, store in an airtight container in a cool dry place for up to 3 days.

24 Christmas Questions

I found this and thought it would be fun to do!
1. Wrapping paper or gift bags? I love wrapping gifts.  I love hearing the sound of the paper being ripped open.
2. Real tree or Artificial? I love the smell of a real tree and was so upset when my parents decided to get an artifical one. N’s family gets a real tree.
3. When do you put up the tree? Usually around the first of December.
4. When do you take the tree down? After new years. 
5. Do you like eggnog? no
6. Favorite gift received as a child? My cat Ollie.
7. Do you have a nativity scene? Yes!  I love nativities.  I would keep them out all year if N would let me.
8. Hardest person to buy for? I don’t usually have problems buying gifts for people.
9. Easiest person to buy for? N 
10. Mail or email Christmas cards? I love sending cards through the mail.  It is so much fun to see how families have grown from the previous years.
11. Worst Christmas gift you ever received? I usually love everything I am given.
12. Favorite Christmas Movie? Rudolph the Red Nosed Reindeer and Twas the Night Before Christmas. 
13. When do you start shopping for Christmas? It depends on when I decide what I am making for people.  Sometimes I get ideas in July.
14. Ever recycled a Christmas present? Yes 
15. Favorite thing to eat at Christmas? Cookies that have been sent by my grandma. 
16. Clear lights or colored on the tree? We have white lights.
17. Favorite Christmas song? Have Yourself a Merry Little Christmas by Judy Garland.
18. Travel at Christmas or stay home? Stay Home.
19. Can you name all of Santa’s reindeer? Yes
20. Angel on the tree top or a star? We usually put a star on top, but I have been looking for an angel to put on top.
21. Open the presents Christmas Eve or morning? Christmas morning.
22. Most annoying thing about this time of year? Lazy people that write X-mas instead of Christmas. Why do they feel the need to take out the reason for the holiday.
23. Favorite ornament, theme, or color? I love my advent calendar. It was my grandma’s and every year when I was little I would put the little stockings with our family’s names on them on it every day.
24. What do you want for Christmas this year? I want a flat iron and a new I pod.

Hoo Are You? 12-7-11

1. Is all your Christmas shopping done?
Most of it is done.  I still have to get the stuff to make my grandma’s banana bread and stuff to make the puppy chow.

2. Do you decorate for Christmas and if so when?
Usually we start decorating Thanksgiving weekend.

3. Do you bake during the Holiday season?
Yes, I love baking.  This year I am making my grandma banana bread as mentioned in question number 1.  I am using her recipe.  I am also making puppy chow for gifts for my aunt and cousins.

4. What are your favorite smells of this time of year?
I love the smell of peppermint and a tree in your living room.

5. What are your favorite things to do during the Holiday Season?
I like to go on a drive and see the lights on all the houses.  Also going into the city and seeing the different stores all decorated.

Dreamsicle Fudge

Dreamcicle Fudge
11/2 stick butter
2/3 cup cream
3 cups sugar
7 ounces marshmallow cream
12 ounces white chocolate chips
9 drops red food coloring
12 drops yellow food coloring
1 TBS orange extract

mix butter,cream,sugar and bring to rolling boil for 6 minutes
then add;marshmallow cream and white chocolate chips.
Take out 1/ 1/2 cup put to side in remaining put food coloring and extract.
Put in 9×13 greased pan:Pour orange mixture into pan and swirl the 1 1/2 of white into pan

Christmas kitties

 This was Ollie two years ago. She always loves looking at the tree.
This is Peachy last year.  She climbs the tree and tries to eat it. Good thing we have an arificial tree right?
