Apple Butter Cookies
1/4 cup of butter or margarine, softened
1 cup packed brown sugar
1 egg
1/2 cup quick cooking oats
1/2 cup apple butter
1 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk
1/2 cup chopped nuts
1/2 cup raisins
1. In a small mixing bowl, cream butter and sugar. beat in egg, oats, and apple butter. Combine dry ingredients; gradually add to creamed mixture along with the milk; beat until blended. Stir in nuts and raisins. Cover and refrigerate until easy to handle.
2. Drop by teaspoonfuls onto lightly greased baking sheets. Bake at 350 degrees F for 15 minutes or until set. Remove to wire racks to cool.
*Dough can be stored in the fridge for several days so you can bake as you need them.
PEPPER STEAK
2 tbs oil
3 cups sliced red, yellow and/or green bell peppers
1 red onion, sliced
1 pound flank steak, sliced
2 tsp chopped garlic
1/4 cup beef broth
2 tbs soy sauce
2 tsp cornstarch
Cooked noodles
In skillet, heat oil. Add bell peppers and onion, cook 3 min. Remove from skillet. In same skillet, add steak and garlic, cook 4 min. or until browned. In bowl, whisk together broth, soy sauce and cornstarch. Add to skillet, bring to a boil. Cook 1 min. more. Add veggies. Serve over noodles. NOT SURE OF HOW MANY SERVINGS.*
