Tater-tot casserole is a favorite dinner in our family. It was the first thing I learned to make on my own and I have been making it since then. Over the past couple of years I have made some adaptions to the original recipe. I have used a cheese soup instead of mushroom soup, chicken instead of ground beef, and chicken enchilada soup with the chicken. Each adaption has been very good. The newest adaption I have made was a a taco version.
Tater-tot taco casserole is a lot like the original recipe in that it uses ground beef, taco seasoning, and tater tots. That is where the similarities end though. I will include the original recipe as well as the taco recipe at the bottom!
With the taco tot casserole you add enchilada sauce, black beans and green chilies to the ground beef after you drain it. Let it simmer together for about ten minutes.
Then pour it into a baking dish and add the tater tots to the top. You can arrange them in a straight line if you want but I always just let them fall and then sort of move them around until they cover the meat.
Bake at 400 degrees for 15 minutes or until the tater tots are done. Cover the tater tots with shredded cheese and bake just as long as it takes to melt the cheese. Usually about 10 minutes! Serve with sour cream.
See how easy that is? It was very filling and we had enough left over for us to have the next night on our leftovers night!! Haha!
