i thought with the super bowl being tomorrow, i would post a few recipes. i hope everyone has a safe and fun super sunday!!
the first one is my mom’s recipe.
White Chili
4 chicken breasts
2 tablespoons olive oil
4 cloves garlic
2 cans green chiles
3 cans chicken broth
2 teaspoons cumin
2 teaspoons oregano
1 1/ 2 teaspoons cayenne pepper
5 cans great norhtern beans
1 cup shredded monterery jack cheese
cook chicken breasts and chop into bite size pieces. chop onion garlic and chilies (if fresh) Heat oil in a large pot over medium heat. Satue’ onions and garlic until onions are tender. add chicken broth green chilies cumin oregano and cayenne pepper. Bring to a boil. Reduce heat to low and add beans. Simmer 20-30 minutes or until heated thoroughly. Serve topped with cheese.
PAPRIKA POTATOES
– 3/4 pound red potatoes, cut into quarters
– 2 tablespoons unsalted butter, melted
– 1 tablespoon paprika
– 1/2 teaspoon black pepper
– 1/2 teaspoon salt
Preheat the oven to 350 degrees F.
Pour the melted butter over the potatoes. Add the paprika, blackpepper, andsalt. Mix well so that the potatoes are evenly coated. Bake in theoven for30-35 minutes, or until the potatoes are fully cooked.
Chicken and Dumplings
4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces
1.. Place the chicken, butter, soup, and onion in a slowcooker, and fill with enough water to cover.2.. Cover, and cook for 5 to 6 hours on High. About 30minutes before serving, place the torn biscuit dough in theslow cooker. Cook until the dough is no longer raw in the center.
