Stop and Smell the Roses

The first Wednesday of the month is the Stop and Smell the Rose link up over at House of Rose! Mandy’s link up has become my favorite link up and I’m so grateful for everything she has done for me in the past year! I’m much more confident in my blogging since she started the link up and I don’t think I would have switched my blogging platform if it wasn’t for her blog!

Anyways, This is the first time I have done a vlog here on WordPress so I have no idea on how to embed it into my post! If someone could help me out with that it would be greatly appreciated. So for now you are just going to have to click on this link:

I am Coltstrong

On Friday night we stayed in Hilton Head SC. We got settled into our hotel and then headed out to the beach! We love going down there just after we get into the hotel! It relaxes us after the long trip! Then we went to find somewhere to eat! We walked over to the shops and restaurants because they were so close to where we were staying. We found this place called Skilletz Cafe. It was so good! Mr. RCGG had fish tacos. They had a jalapeno and cilantro yogurt sauce on them that he said was so good! I dipped a fry in it and it was really good and I don’t even like cilantro. I had fish and chips again! This time the fish was cod instead of grouper. I think I liked the grouper better!

After we ate we went over to Subway to get a couple sandwiches for just in case we were hungry later in the night! We took those back to hotel and went out on to the beach again  since my husband likes to see the ships off in the distance after dark!  That is one of his favorite things to do on the beach. Besides trying kick water all over me! =)

On Saturday morning we got everything back into the car and went back over to the shops. I collect ornaments and key chains from trips we have been on and until this trip I didn’t have a Hilton Head ornament. I found a yacht one with Christmas lights on it! I am going to eventually have a Christmas tree up year round with all the ornaments from our trips.  We also stopped at Sweet Carolina Cupcakes to get some of the best cupcakes we have ever had. The website doesn’t have their fall flavors listed, but I got a fresh apple cupcake and Mr. RCGG got a banana pudding cupcake. They are so moist (such a horrible sounding word, but it is the only word I can think of) and full of flavor! The apple one was a spice cake with chunks of apple baked into it and buttercream icing and dried apple slices on top! The banana pudding was a white cake with banana baked into it. It also had buttercream icing on top with a vanilla wafer cookie on top! Mr. RCGG said it was very good.

We headed out to Jekyll Island, one of our favorite places in the world!  We stayed at the same hotel that we stayed at over Labor Day weekend.  Every time we go down there we get pizza from Red Bug Motors Pizza. They have a meat pizza that has all the meats you can put on a pizza. It is so good that we get it every time we go! After that we went down to the beach to walk along the shore. The tide was so high all weekend and the waves were crashing onto the beach almost at the steps to the beach!

Over the weekend Mr. RCGG and I went down to Jacksonville FL for the Colts and Jaguars game!

It was a lot of fun. The Colts won, but then that’s not very surprising since the Jaguars haven’t won a single game this season! I can’t wait to go to a game in Indianapolis at Lucas Oil Stadium!

On our way home from Jacksonville, we stopped at Steak n Shake to eat! There were a bunch of Colts fans that also stopped there to eat! I think there were at least six tables of people with Colts shirts on. I had taken mine off before we left the parking lot at Ever Bank Field. We went back to the hotel and again went down to the beach. We looked for shells and play in the waves. It looks like we spend the entire time on the beach doesn’t it? Haha!

Monday morning we headed back home. Before we left the island we stopped at the Jekyll Island visitors center so I could get some postcards. I get postcards from trips to put in my travel smash book. I also got a JI sticker and a jar of peach butter. I can’t wait to try it!

It was a great weekend and I can’t wait until we go back again! This year has been full of trips and I wouldn’t have it any other way! I love traveling with my husband!

Weekend Wrap-up

The weekends come and go way too fast don’t you think? Monday always comes before you know it!

This weekend Mr. RCGG and I didn’t really do too much! I wasn’t feeling that well on Friday with my sinuses so I stayed home and he went and did some work shopping!

On Saturday, I felt a hundred times better, but I still stayed home from the auction to catch up on some sleep that I didn’t get Friday. While my husband was at the auction I was going to make peanut butter blossoms, but we didn’t have any shortening so I made chocolate chip cookies instead.

Sunday was a pretty good sports day in our house! Mr. RCGG’s favorite football team, the Carolina Panthers, won and my Indianapolis Colts won! Plus Sunday marked one week until I get to see them play in Jacksonville. The biggest sports excitement in our house is this:

1238300_10151690278172831_848192931_nWE OWN THE EAST! POSTSEASON HERE WE COME!! This is the first time since 2005 that the Braves have won the division. The Nationals lost yesterday which automatically put the Braves into the playoffs and they also won against the Cubs! It was so great to see them celebrating in the locker room!

I have really been a little behind on my blogging! I have been working on getting things straightened out between WordPress and Blogger and it has been a little slower than I thought it would be! By the end of next week I hope to have everything finally transferred over and have the giveaway I’m planning!

Relaunching Random Crafty Georgia Girl

I have been working very hard on getting everything transferred over from Blogger this past week and by the end of the month I will be ready to relaunch Random Crafty Georgia Girl! Yes, I know I have been blogging from my new site since I moved, but I want to have a big celebration to make it a grand relaunching! You know like when stores have a grand re-opening?

Caramel Apple Cookies

I love baking! There is just something about it that calms me and makes me happy! Most people think baking is a hassle and takes too much time, but when I am in a bad mood or bored I will bake! Today I am sharing one of my favorite fall cookie recipes with you! I love anything caramel apple and since fall is almost upon us I thought it would be the best time to share this fabulous recipe with ya’ll!

This is a very easy recipe. These cookies are very soft and you can definitly get a lot of apple flavor in them. I think the hardest part about the entire recipe is shredding the apple.

Caramel Apple Cookies

1/2 cup butter, softened
1 1/4 cup brown sugar
1 teaspoon baking soda
1 teaspoon apple pie spice (*If you can’t find apple pie spice you can use a teaspoon each of nutmeg, cinnamon, and allspice. I usually sprinkle some over the apples before adding them to the batter as well. Just a little bit though.)
1/4 teaspoon salt
1 egg
1/2 cup apple juice or milk
2 1/4 cup all purpose flour
1/4 cup all purpose flour
1 large tart apple (granny smith) peeled and coursely shredded
1/2 cup brown sugar
3 tablespoons butter
3 tablespoons apple juice
2 2/3 cups powdered sugar

In a large mixing bowl beat 1/2 cup butter with an electric mixer on medium speed for 30 seconds. Add 1 1/4 cup brown sugar, 1 teaspoon baking soda, apple pie spice and salt. Beat until well combined. Beat in egg until well combined. Add 1/2 cup apple juice and beat on low. MIXTURE WILL LOOK CURDLED!

Beat in as much flour as you can with the mixer. Stir in the remaining flour. Fold in apple.

Drop dough by slightly rounded teaspoons 2 inches apart onto a parchment paper lined cookie sheet.

Bake for about 10 minutes at 350 degrees or until tops are lightly browned. Let stand 2 minutes on cookie sheets. Transfer to wire racks to cool.

In a small sauce pan heat and stir 1/2 cup brown sugar, 3 tablespoons butter, and 3 tablespoons apple juice over medium heat until dissolved. Whisk in powdered sugar. Spread on tops of cookies. Sprinkle with pecans if desired.

**If frosting hardens, stir in small amount of apple juice.

Two Weeks

Do you count down to special events? I know I do and I am so excited that in two weeks from Sunday Mr. RCGG and I will be headed down to Jacksonville Florida to see the Colts play the Jaguars.

Getting Back in The Habit

This summer started with a very good walking schedule! Then one day it started to rain and that rain didn’t stop for at least two weeks! So unfortunately Mr. RCGG and I got out of the walking habit! On days that it wasn’t raining it was too hot to walk outside. We don’t have a treadmill so outside is the only way we can walk or run!

I have been using the basic run on Wii Fit Plus and last week I unlocked the long distance course! So this week I am going to start that course. I know it isn’t the same thing as actually getting outside and running to train for a 5K, but it is all I can do right now! Maybe by the beginning of next month I will actually be outside running again!

The next day after a run my legs always hurt so much! I think this as my motivation and that pain just goes to the back of my mind! I will get back to the 5K training as soon as it cools down a bit!
